Caldo De Res is the first thing that came to mind when I told my husband I was craving soup for dinner. This instant pot recipe is quick, easy, and reminded Josh of one of his favorite childhood meals.

Instant Pot Caldo De Res
Caldo De Res is a traditional Mexican beef and vegetable stew.
Instructions
Add beef, olive oil, onion, garlic, and ground cumin into the Instant Pot. Saute for a couple of minutes or until the meat starts to brown and onions soften. Cancel saute option.
Add water, chicken bouillon, tomato paste, and cilantro. Set the Instant Pot to high pressure for 20 minutes. Once the time is up, perform a quick release by turning the valve from seal to vent. It took about 3 minutes for all the pressure to release from my Instant Pot.
Add all vegetables except for the zucchini and the canned corn—Cook at high pressure for 5 minutes and then quick release.
Add the zucchini and corn and close the lid to allow it to steam the remaining vegetables.
Taste and add salt or water as needed.
Top with fresh cilantro and serve. Enjoy!
